Mix the Tuna Mixture
Add drained tuna to a large bowl. Mix in 1/4 cup bread crumbs, garlic powder, onion powder, salt, pepper, chopped parsley, 2 beaten eggs, shredded cheese, and mayo. Mix well.
Form Balls
Roll mixture into balls about 1-2 inches in diameter. Place on a cutting board.
Initial Breading
Roll each ball in bread crumbs to coat.
Chill
Refrigerate the balls for 1 hour to firm up.
Double Bread
Beat 2 eggs in a small bowl. Put bread crumbs in a separate bowl. Dip each chilled ball into the beaten egg, then roll in bread crumbs again.
Fry
Heat vegetable oil over medium-high heat (enough to almost cover the balls). Fry for about 5 minutes, turning to brown evenly, until golden and crispy.
