Brown the Chorizo
In a large soup pot, cook the chorizo over medium-high heat until browned.
Remove and set aside, but leave the flavorful fat behind.
Sauté the Veg
In the same pot, sauté the red onion, celery, carrot, and garlic.
Cook for 5–10 minutes, stirring occasionally, until everything softens and starts to smell amazing.
Bring the Meat Back
Add the browned chorizo back into the pot. Stir it in and let things mingle for a few minutes.
Deglaze with Wine
Pour in the white wine and scrape up any tasty browned bits from the bottom of the pot.
Let it simmer briefly.
Add the Broth and Kale
Add chicken broth and bring the whole pot to a boil.
Stir in the kale and let it wilt down into the broth.
Adjust & Simmer
Add water if needed to reach your preferred soupiness.
Season with salt, pepper, and Cajun seasoning to taste.
Simmer gently until everything is well combined and delicious.
