Add to Crock Pot
Place whole chicken breast fillets in the slow cooker. Add sliced onion, garlic cloves, chicken stock, and both packets of taco seasoning. No need to mix—just layer everything in.
Cook Low and Slow
Cook on HIGH for 3-4 hours or on LOW for 6-8 hours. The chicken should be tender enough to shred easily with a fork.
Shred and Mix
Using two forks, shred the chicken directly in the slow cooker. Add the cream cheese and stir everything together, making sure the cream cheese melts completely and mixes through the chicken and liquid.
